Pet-Nat, short for pétillant naturel- is a French term that essentially translates to “naturally sparkling”. Using grapes intended for our still White Pinot Noir, the juice was gently pressed from the grapes before being transferred into a small stainless steel tank where it was able to ferment spontaneously with ambient yeast.

Once the desired sugar level was reached, we chilled the tank down to "pause" the fermentation. From there, the partially fermented juice was hand-bottled and finished with a simple crown cap allowing for the fermentation to finish in the bottle “trapping” CO2 bubbles in the wine. The result is a fun, rustic, and naturally sparkling wine made from pure Maggy Hawk Pinot Noir.

The 2023 Anderson Valley Pet-Nat greets you with apricot jam, sweet chamomile, marzipan and peach sorbet aromas as it opens in the glass. This wine dances along your palate with delicate effervescence and a punch of acidity; along with flavors of Genoa fig, Asian pear and yellow plum finishing dry and lingering. This wine offers a truly beautiful sparkling experience that envelops the senses.
